BOISE, Idaho (CBS2) — With a laid back yet sophisticated atmosphere, Saltbrush serves as a fun new addition to downtown Boise.
"The aim is to be seasonal and fresh and to do as much as we can in house," said Saltbrush co-owner Neil Grant. "Even our bread we bake in house, desserts are all made in house."
Grant says Saltbrush is focused around sustainability and relaxation.
"We try and keep it as local and as fresh as we can, the focus is not having this large, extensive, three page menu. We have Snake River Farms steak as well as chicken that we make sure to brine long enough so it's juicy and succulent, there's a lot of flavor in it," said Grant. "It's fun, warm, you can have a glass of wine, sit down with your friends and just enjoy the space."
Grant is originally from Cape Town, South Africa, where he owned several restaurants. He says he fell in love with Boise and was excited to continue his passion here.
"This is a great place but I didn't just come in and open a restaurant. I spent enough time in Boise to understand what this city is about and it sort of reminds me of Cape Town in that it's a beautiful city, there's so much happening, but at the end of the day we want to be relaxed and we want to enjoy ourselves," said Grant. "I'm here to be part of the whole downtown Boise. I want every restaurant to survive. We all want to thrive together and that's part of it. It's uplifting everybody together, so hopefully we can do that."
Grant owns Saltbrush with Erik Johnson, who was born and raised in Boise but spent most of his career in the Bay Area as a chef. He says they are both very happy to be living in Idaho and putting down roots with Saltbrush.
"Boise's been the best thing ever, it's great for kids and that's why I'm excited to open Saltbrush," said Grant. "At the end of the day, I want people to enjoy it. I've been doing this for 30 years and thought, 'Let's put it to use.' I'm excited to be a part of what's happening here."
Grant says the menu at Saltbrush appeals to a variety of budgets.
"It's an elevated experience but still has an everyday dining budget. You don't have to come and have the almost $60 steak, you can have a few small plates and have a cocktail," said Grant. "We want people to sit in the bar and enjoy our extensive wine list. It's casual, it's relaxed."
